It's fall- hurray! The weather is turning cooler, kick-off times dictate our Sundays, and I am thinking about apples. So, I was going to share a recipe for a beautiful and impressive apple tarte tatin...and then I thought, who has time for that? Seriously, are we not all stretched a little thin right now? But when you still want to make something special and delicious and homemade, you need a go-to recipe, and this is it. As a bonus, it's incredibly easy to make, which is why I feel like it makes for a great life compromise. Most days I am simply not going to have the time (or the bandwidth) to make my own ice cream, but I can whip this up in 5 minutes, pour it over store-bought vanilla, and I guarantee you, no one will miss that apple tart.
Real-Deal Butterscotch
1 cup (packed) Brown Sugar
1/3 cup Heavy Cream
1.5 oz. Butter
2 Tbsp. Corn Syrup
2 Tbsp. Scotch or Bourbon
1 tsp. Vanilla Extract
Bring the sugar, cream, butter and corn syrup to a boil. Cook, stirring, until the sugar has dissolved. Turn off the heat and stir in the scotch and vanilla. Enjoy over ice cream, pound cake or baked apples!
